Peaches and Vanilla Smoothie

A couple of days ago my friend Marissa from Joy-filled Nourishment posted the most drool-inducing photo on her Intagram feed of Grazed & Enthused’s  Strawberry Peaches n’ Cream Smoothie. I have not been able to stop thinking of it since (seriously, I dreamed about it).

Problem: we don’t have a blender (yet) that is strong enough to grind down the strawberry seeds.

Our current blender + strawberries seeds + my history of chron’s disease would equal a trip to the ER and those are just not fun for anyone.

Today I came up with a yummy treat and that I think anyone would really enjoy. Even though this has maple syrup in it, the flavor of the peaches and the pinch of salt keep it from being too sweet.

I used fresh peaches but frozen would work just as well. If you use frozen, cut back on the amount of ice you add to the mix.

*This could probably be thickened to milkshake texture with banana or plantain but those are migraine triggers for me so for now–this is my version of a milkshake and I am happy with it 🙂

I made enough for hubby and me to each have a nice size serving

Ingredients

1 Can Coconut Milk

3 Cups Peaches diced

1 Tablespoon Maple Syrup

1 Tablespoon Vanilla

Pinch of Sea Salt

1/4 Cup Ice 

Blend and enjoy!
